Abstract

This community service activity aimed to enhance the knowledge and skills of local MSMEs in Kualu Nenas Village on utilizing pineapple peel waste to produce nata de pina. The training involved 12 participants and combined lectures, hands-on practice, and evaluation. Observations and post-training questionnaires indicated high engagement, with 100% of participants acknowledging the usefulness of the activity. Knowledge assessment using the N-Gain score revealed a significant increase, with an average gain of 0.93 (93.06%), categorized as high. Participants learned to transform pineapple peel, previously discarded as waste, into a high-fiber, low-calorie, and marketable product. The training demonstrated practical methods for extraction, fermentation with Acetobacter xylinum, and product handling. This initiative not only improved participants’ technical competence but also promoted sustainable waste utilization, enabling the community to convert pineapple by-products into economically valuable and health-beneficial products.
